9 scoops of Healthspan (Men’s or Women’s)

½ cups of cream cheese

1 teaspoon vanilla extract

¼ cup caster sugar

1 ½ tablespoons of lime juice

Zest of one lime

½ cup desiccated coconut + extra 1/3 cup for coating

1 cup ground walnuts (about 1 ½ – 2 cups whole nuts)

Optional – crumbled milk arrowroot or butternut snap biscuits

1. Mix room-temperature cream cheese with vanilla extract in a bowl. Once combined, add lime juice and lime zest and mix well.

2. Add Healthspan 50+, desiccated coconut, sugar and ground walnuts into cream cheese mix, and again mix well.

3. Refrigerate the mixture for 1 hour so that the mixture absorbs any excess moisture.

4. Roll mixture into balls. Once the ball is formed, roll in coconut until covered and shake off excess.

5. Refrigerate for 2 hours before eating, store in an airtight container in the fridge for up to 7 days.

6. Optional – if you like a little more crunch, crumble milk arrowroot or butternut snap biscuits and use to coat balls instead of coconut.
